Presentation Explores Benefits of Eating the Rainbow

On the afternoon of Saturday, April 27 approximately 20 people attended a presentation at the Swan River Seventh-day Adventist Church by Glenda Nischuk. Glenda is a certified Nutritionist. She and her husband, Lornen own a Business in Yorkton called The Better Living Centre. The title of Glenda’s presentation was: Colorful Foods, Eating the Colors of the Rainbow.

Glenda spoke about the importance of eating foods of every color. Medical research has revealed the incredible health benefits of eating a diet rich in fruits, vegetables and whole grains, combined with small quantities of various types of nuts, as well as healthy fats such as olive oil and avocados.

This is acknowledged in Canada’s new (2019) Food Guide.

Eating some food from each color group every day whenever possible is the best approach to getting all the vitamins and minerals your body needs. Nearly all colors of fruits and vegetables contain phytochemicals which help prevent cancer.

The most common food colors and their beneficial attributes are:

GREEN foods that get their color from chlorophyll. Chlorophyll is a natural blood purifier. It that supports the liver and kidneys in the elimination of toxins. Green foods also contain high amounts of Vitamin K, which is necessary for blood clotting and strong bones. Examples of green foods include spinach, celery, kale, broccoli and green beans, etc.

YELLOW foods are rich in Vitamin C. This helps reduce inflammation, prevent allergies, and maintain healthy skin, because of its’ ability to combat free radicals. Yellow foods also contain citrus bioflavonoids, which strengthens the collagen in your skin, tendons, cartilage and ligaments. Examples of yellow foods include lemons, yellow peppers, pineapples, yellow, grapefruit, etc.

ORANGE foods are high in beta-carotene which transform into Vitamin A and antioxidants. These aid in the prevention of cancer, heart disease, and infections by supporting the immune system . Beta-carotene also helps maintain healthy eyes and skin. Examples of orange foods include sweet potatoes, carrots, cantaloupe, squash, oranges, etc.

RED/PINK foods are rich in lycopene and anthocyanin, which benefits the circulatory system by helping build healthy cell walls. This improves circulation and organ function and reduces high blood pressure. Red foods also offer protection from harmful UV damage. Examples of red foods include beets, tomatoes, watermelon, red bell peppers, etc.

PURPLE/BLUE/BLACK foods contain the most antioxidants and therefore contribute to disease prevention, overall health and longevity. They help raise HDL (the “good”) cholesterol, and also help maintain a healthy brain. Examples include blueberries, blackberries, purple cabbage, eggplant, etc.

BROWN foods are high in protein and contain B vitamins, potassium, indoles, isothiocyanates and anthoxanthins. They provide energy to the body and help protect against cancer. Foods in this group include potatoes, brown lentils, brown pears, dates, dried figs, brown pears, etc.
